(Danish Almond Pudding with Oat Rice and Cherry Sauce)

           Ingredients

Ingredients for the Oat Rice Pudding:

  • 1 Cup Oat Rice
  • 1 ¼ Cup of Water
  • 4 Cups of Milk (We use Almond milk)
  • ¼ Teaspoon of Salt
  • 2 Teaspoons of finely grates lemon zest
  • 2 Tablespoons of White Sugar (We used Monk Fruit Sweetener instead)
  • 4 Ounces of Slivered Almonds

Ingredients for the Risalamande:

  •  2 Cups of Heavy Cream (We used Coconut Cream)
  • 2 Tablespoons of Vanilla Bean Paste
  • Sugar/ Sweetener to Taste
  • Cherry Sauce

Cooking Instructions:

Bring the Oat Rice, Salt, Lemon Zest, Sugar, and Water to a boil in a medium sized, thick-bottom sauce pot & boil for 3 minutes. Remove from heat, add the milk, and bring back to a boil.

Reduce the heat and cover, simmer on low heat for 30-35 minutes. Stir occasionally and increase to a regular stir after 25 minutes for the final 10 minutes to prevent the mixture from burning.

Remove from heat once it reaches your desired texture, and stir in the almonds. Let the Oat Rice mixture cool and refrigerate overnight.

 

Now move on to the Risalamande. Beat the heavy Cream (or in this case the coconut cream) until peaks have formed, add the vanilla paste and sugar/sweetener, and beat until there are stiff peaks formed on top.

Remove Rice from the fridge and stir well. Once the Oat Rice mixture have loosened up you can start to fold in Risalamande mixture. Serve with some cherry sauce on top once the dish have reached room temperature.

***I couldn’t find any frozen cherries so we just used “No Sugar Added Cherry Pie Filling”.

How to Cook Oat Rice!

Decide on how many servings you need

Think of NorthernEdge® Oat Rice as 1 box of Kraft dinner! One cup of raw oat rice would make 4 servings.

Lets get cooking!

Add one cup of NorthernEdge® Oat Rice to three cups of water into a pot and cover with a lid.

Boil That Baby!

Turn on to high, once it comes to a boil turn down to medium heat.

But for how long? – Sticky Rice

If you prefer a more-sticky texture, the total cook time of the oat rice should not exceed 20 minutes (starting once you turned on the element), and the rice does not need to be rinsed.

But for how long? – Loose Kernels

If you would like to have a more traditional texture to your oat rice, the total cook time of the oat rice should not exceed 15 minutes (starting once you turned on the element), and the oat rice can be rinsed with warm water.
