(Classic Cajun Oat Rice )

           Ingredients

  • 2 Tablespoons of Olive Oil
  • 2 lbs. of Chicken Drumsticks
  • 1 lbs of Andouille Sausage (Thinly sliced into rounds)
  • 3 Medium Bell Peppers
  • 3 Celery Stalks (Diced)
  • 1 Medium Onion (Diced)
  • 1½ Cup of Oat Rice

  • 1 Jalapeno (Finely Diced)
  • 4 Cloves of Garlic(Minced)
  • 1 Can of Diced Tomatoes
  • 1 L of Chicken Stock
  • 2 Tablespoons of Cajun Seasoning
  • 1 Teaspoon of Dried Thyme
  • 1 lbs. of Raw Shrimp (Peeled & Deveined)

Cooking Instructions:

Heat 2 tablespoons of Olive Oil in a deep cast iron pan (or a stock pot). Add the drumsticks and sauté until the start to brown, about 7-9 minutes. Your dish is now ready for the sausage, bell peppers, celery, onion, jalapeno, and garlic. Sauté for an additional 6 minutes until the onions are soft.

Add the diced tomatoes, chicken stock, Cajun seasoning, and thyme. Cook over medium heat until the mixture comes to a simmer. Reduce the temperature to medium low, and maintain the simmer for 10 minutes before adding the Oat Rice.

Simmer for 25 minutes and stir occasionally to ensure that the Oat Rice does not burn. We have some members in the family that are sensitive to shrimp so I did not include it in this recipe, but this would be the time to add it in if you were to and allow the dish to simmer for another 5 minutes.

Season with salt and pepper to taste.

 

 P.S. Our household prefers meat on bone wherever possible, but feel free to substitute the meat with 1.5 lbs of boneless skinless chicken thighs (cut into cubes) and you can also skip the initial 10 minutes of simmer and head straight to adding the Oat Rice.

How to Cook Oat Rice!

Decide on how many servings you need

Think of NorthernEdge® Oat Rice as 1 box of Kraft dinner! One cup of raw oat rice would make 4 servings.

Lets get cooking!

Add one cup of NorthernEdge® Oat Rice to three cups of water into a pot and cover with a lid.

Boil That Baby!

Turn on to high, once it comes to a boil turn down to medium heat.

But for how long? – Sticky Rice

If you prefer a more-sticky texture, the total cook time of the oat rice should not exceed 20 minutes (starting once you turned on the element), and the rice does not need to be rinsed.

But for how long? – Loose Kernels

If you would like to have a more traditional texture to your oat rice, the total cook time of the oat rice should not exceed 15 minutes (starting once you turned on the element), and the oat rice can be rinsed with warm water.
